However, it is quite hard to find vegan Char Kuey Teow as it usually contains some type of animal protein like egg, chicken, pork or seafood. Hence, we bring you a vegan recipe that is sure to relieve your cravings for this delicious fried dish. If the term ‘vegan’ throws you off, do not worry because it simply means this dish is animal product-free and filled with vegetables instead.
This dish serves 1
Ingredients:1/2 tablespoon coconut oil
1/2 teaspoon of sesame oil
1 clove garlic, minced
3 chives or spring onions, chopped into 1 1/2-inch lengths
1 handful bean sprouts
5 stalks mustard leaves/sawi
1 cup cabbage, thinly sliced
1 serving of fresh wide noodles
1 block firm tofu, diced into bite-size
1 tbsp thick sweet soy sauce
1 tbsp light soy sauce
Bird’s eye chilli (optional, to garnish)
Note: Prepare everything before you start cooking as you need to keep your wok very hot.1. Heat the wok over a high heat. Add oils and heat until it smokes.
2. Add the garlic and stir briefly until fragrant.
3. Add the mustard leaves and cabbage, stirring while cooking until slightly wilted.
4. Mix in the noodles, protein and the sauces to fry for a few minutes or until you can see charred marks on the noodles.
5. Stir through the bean sprouts and chives or spring onions.
6. Garnish with chilli and serve.
